The OLLA is far more than a decorative object — it is part of a living tradition deeply woven into Egyptian daily life. For centuries, people across Egypt have relied on these porous clay vessels to keep drinking water refreshingly cool without the need for electricity. The secret lies in the natural properties of the clay: as water slowly evaporates through the surface, it gently cools the water inside.
In earlier generations, almost every home had an OLLA, particularly before electric refrigerators became common. Families depended on these clay vessels to keep their drinking water cool throughout the day. At that time, preserving food was far more difficult. Many households used a wooden or insulated box in which a large block of ice was delivered and placed inside, with food arranged around it in an attempt to keep it cool. This system required regular ice deliveries, was costly, and involved considerable effort. Because of this, the simple OLLA became an indispensable household item — a reliable and affordable way to keep water naturally cool in the intense Egyptian heat.
Throughout Egypt — in villages, towns and busy city streets — OLLAs are still often placed outside homes, small shops and market stalls. Passers-by are welcome to stop and drink, a long-standing custom reflecting the Egyptian values of hospitality, generosity and community care. Even today, many households continue to use OLLAs alongside modern refrigerators, appreciating the naturally cooled taste of water and the enduring charm of this traditional clay vessel. In many rural areas today, the OLLA remains the primary and most trusted method for naturally cooling water. Owning an OLLA connects you to this enduring cultural tradition — a simple yet beautiful practice that has refreshed people for generations.
1. Preparing the OLLA. Before first use:
- Fill the OLLA halfway with water and shake gently
- Empty and repeat this process three times
- Fill completely and leave for 24 hours
- After 24 hours, empty and rinse again as above
- Your OLLA is now ready to use. Simply fill to just below the neck opening and allow the clay to begin its natural cooling process.
2. To enjoy water the traditional Egyptian way:
- Hold the neck of the OLLA with one hand and support the base with the other. Tilt it gently towards your mouth from around 10 cm above, allowing the water to flow slowly.
- This method often creates the familiar soft gargling sound as the water pours — a small but authentic part of the traditional experience.
- Alternatively, you may pour the water into a glass or drink directly from the OLLA.
Versatile Placement. Whether indoors or outdoors, the OLLA is designed to suit almost any setting. Place it on a sunny windowsill, a shaded patio, or within your living space as a unique decorative piece. Because the porous clay naturally “sweats” while cooling the water, it is recommended to place the OLLA on a plate or shallow dish to catch condensation and protect surfaces. If desired, the top opening may also be lightly covered with a small saucer, cloth, or similar cover to help keep the water fresh and protect it from dust. Regardless of the weather, the OLLA will continue to provide naturally cool, refreshing water.
